Risotto is a reduction of a rice broth cooked with various ingredients. It is generally given as origin in the north of Italy.

⚜️The risotto depends on the utilization of boring rice, not steamed, and on the rule of cooking by including little amounts of hot stock in progression, in the wake of having seared the rice in onions dissolved in margarine (Po Valley formula) or hamburger marrow (Milanese formula) or olive oil (all the more regularly utilized in southern Italy).

🚩Ingredients : 

for 02 to 04 person 

✔️320 g Arborio rice for Italian risotto
✔️300 g of shrimps
✔️15 cl of white wine
✔️1 l chicken stock
✔️2 shallots
✔️grated parmesan cheese
✔️olive oil
✔️1 dose of saffron or 10/12 pistils
✔️1 teaspoon of coriander seeds
✔️1 ear of long pepper
✔️4 cardamom seeds

🚩Instructions :

1. Heat a small glass of water without boiling it. Put the saffron pistils to infuse.
2. Thinly slice the shallots.
3. Pour a large trickle of olive oil into a saucepan. Heat the shallots for 2 minutes so that they are almost pale in color, then add the rice and stir vigorously so that the rice is well soaked in the olive oil. Use a fork to separate the rice grains.
4. Then add the white wine and let it heat up for 1 min.
Start pouring the broth with a ladle until the rice is covered. Add the saffron infusion (with the pistils). The rice will absorb the preparation.
5. When the broth is absorbed by the rice, repeat at least 3 times and cover. The risotto is ready when the rice has not completely absorbed all the broth, this way it remains very creamy.
Mix the spices and crush them in a mortar. You can also grind them in a mill or blender.
6. Pour a little olive oil over the shrimps and sprinkle the spice mixture over them to coat them well.
Put them in a frying pan or on the barbecue to cook them and they are ready!
