Quiche Loraine

Everyone knows the traditional quiche lorraine with bacon! But what would 

you say to revisit it? For a change, I propose an original and easy to

 prepare alternative recipe for meals that are different from the ordinary. 

Quiche but not pie, this regional specialty is a friend who wants you well.

 As convivial as it is generous, the quiche lorraine is cooked either in a very

 simple version (with a ready to unroll dough) or in a slightly more 

elaborate version (with a home-made shortcrust pastry). And in terms of 

presentation, it's up to you to serve it as a starter or a main course, and why

 not as an aperitif, cut into mini portions to be eaten with friends.

⚜️Quiche Loraine

        🚩Ingredients : 

      for 04 to 06 person 

  •     ✔️200 g of shortcrust pastry
  •     ✔️200 g of bacon
  •     ✔️30 g butter
  •     ✔️3 eggs
  •     ✔️20 cl of fresh cream
  •     ✔️20 cl of milk
  •     ✔️Nutmeg
  •     ✔️Salt
  •     ✔️Pepper
  •     ✔️Preheat the oven to 180°C (thermostat 6).

    🚩Instructions :

    1. Spread the dough in a mold,

   2.prick it with a fork. Sprinkle with butter shavings.

   3.Brown the bacon in a frying pan.

   4. Beat the eggs, fresh cream, and milk.

   5. Add the bacon.

   6.Season with salt, pepper, and nutmeg.

   7. Pour over the dough.

   8.Cook for 45 to 50 minutes.

⚜️Shrimp and Lemongrass Quiche

Easy to make, this savory shrimp tart is tasty. Made with lemongrass and 

coriander to bring Asian flavors, this quiche will be perfect served with a salad.

      🚩Ingredients : 

      for 04 to 06 person 

  •     ✔️1 shortcrust pastry
  •     ✔️500 g of cooked pink shrimps 
  •     ✔️2 eggs
  •     ✔️10 cl of milk 
  •     ✔️10 cl of liquid cream 
  •     ✔️1 tbsp. ketchup
  •     ✔️1 bunch of coriander 
  •     ✔️1 sprig of fresh lemongrass (optional) 
  •     ✔️1 tsp. tablespoons of flour + 30 g to spread the dough
  •     ✔️10 g butter for the mold 
  •     ✔️a few drops of Tabasco
  •     ✔️salt

🚩Instructions :

1. Shell the shrimp and cut them into 2 or 3 pieces. Thinly slice and chop

 the coriander. Cut the lemongrass stem into very thin slices.

2. Preheat oven to 180 ° (th 6). Butter a pie dish. Spread the dough on the 

floured worktop (or unroll it), place it in the mold (no need to butter it if you 

use a roll of dough, put the dough with its baking paper), and prick it with

 the prongs of a fork.

3. Spread the shrimp over the dough. In the bowl of a food processor, mix the

 eggs with the flour, milk, cream, ketchup, salt, and Tabasco. Add the 

coriander and stir.

4. Pour this mixture over the shrimp, sprinkle with slices of lemongrass and

 bake for about 40 minutes. Serve hot or warm.

 ⚜️Leek and Tofu Quiche

         ğŸš©Ingredients : 

       for 04 to 06 person

  •      ✔️400 g of Tofu Soy Silky Tofu
  •      ✔️1 puff pastry
  •      ✔️3 leeks
  •     ✔️1 egg
  •     ✔️1 egg yolk
  •     ✔️15 cl of dry white wine
  •     ✔️Mustard
  •     ✔️Nutmeg nutmeg
  •     ✔️Olive oil
  •     ✔️Salt
  •     ✔️Pepper

🚩Instructions :

1. Finely chop the leeks before frying them in a frying pan with a light drizzle 

of olive oil and a little water.

2. Add the wine after 15 minutes of cooking.

3. Once the leeks have melted, remove them from the heat and add the tofu

 and eggs.

4. Mix by adding a little nutmeg, salt, and pepper.

5. Place the puff pastry in a pie tin and spread a thin layer of mustard 

on top.

6. Pour the leek mixture over the tart base.

7. Cook about 30 mn at 210°C (Th.7).

 ⚜️Quiche with smoked haddock and dill

Change a little bit from the traditional salmon quiche by testing this original

 and refined version based on haddock. Delicate and tasty, the smoky flavor 

of the fish will marry perfectly with dill. Serve the quiche as a starter or

 as a complete dish with a green salad.

          🚩Ingredients : 

        for 04 to 06 person

  •       ✔️1 shortcrust pastry
  •       ✔️250 g haddock
  •       ✔️200 g grated Emmental cheese
  •      ✔️4 eggs
  •      ✔️25 cl of whole milk
  •      ✔️25 cl of liquid cream
  •      ✔️1 bunch of dill

🚩Instructions :

1. Spread the shortcrust pastry in a pie dish. Set aside in a cool place. 

Preheat the oven to 200° (thermostat 6).

2. In a large bowl, mix the milk and cream, add two eggs and two egg yolks,

 and half of the cheese.

3. Cut the haddock into thin strips and chop the dill. Spread the filling over

 the shortcrust pastry and then pour the "milk-cream-egg" mixture.

4. Finally, add the remaining cheese and put the mixture in the oven for

 about 35 minutes.

🚩 Tips :

You can replace the haddock with smoked salmon and accompany
 it with a mesclun seasoned with a drizzle of hazelnut oil.
