*Lebanese Chicken Shawarma Recipe*
 Lebanon invited itself to our table a few years ago with this chicken Shawarma and a couple of dishes. The Lebanese cuisine is rich and varied, it consists mainly of Mezzé which is a set of varied dishes that similar in some way the tapas. 

 #NOTE#

         Alergie: Gluten-free-Garlic-tomato- lemon-pickles-sesame sauce

       ⚜️This assortment of dishes is usually eaten with pita bread
           ✔️  Baba ghanouj, hummus, Fattouche, Tabbouleh, chickpea salad,
                  pita bread.


  ⚜️Homemade style shawarma without metal skewer like the restaurants 

    ✔️Start by mixing the marinade ingredients in a ziplock bag or salad bowl.
        Add the chicken cutlets. Macerate well with your hands so that the
        cutlets soak in the marinade.
    ✔️Leave to marinate overnight if desired or for a few hours
        (in the morning for the evening).
    ✔️Mix the ingredients for the yogurt sauce in a bowl, film, and place
        in a cool place until ready to serve.
    ✔️Heat the BBQ or a large grill pan. Cook the chicken cutlets until they turn
      nice color on both sides.
    ✔️Place in a large plate and cover with aluminum foil to keep them warm.
       Cut the cutlets into slices and place on a large serving plate accompanied 
       by homemade pita yogurt sauce as well as Fattouche salad and
       Lebanese tabbouleh.


        ⚜️Homemade beef shawarma with sesame cream sauce
                     and yogurt sauce.
       ✔️It's the same technique and method as the chicken shawarma you'll 
            need to replace the chicken with beef tenderloin to get a soft
             beef shawarma

         🚩Ingredients : 

       ✔️500g chicken fillets without skin well cleaned
     *Marination for chicken :
       ✔️ cloves of garlic
       ✔️ 1 lemon juice and zest of 1 lemon pc
       ✔️ 1 orange juice and zest of 1 orange pc
       ✔️ 1 half bunch of fresh coriander/parsley 
       ✔️ 1 white onion
       ✔️ 1 red capsicum
       ✔️ clove of garlic
       ✔️ 1 pc chicken stock
       ✔️ 1 pc bay leaves
       ✔️ 2 tsp white vinegar 
       ✔️ 3 cl of corn oil
       ✔️ 1 teaspoon coriander powder
       ✔️ 1 teaspoon cumin powder
       ✔️ 1 teaspoon turmeric powder
       ✔️ 1 teaspoon Ginger powder
       ✔️ 1 teaspoon cinnamon powder
       ✔️ 1 teaspoon chicken shawarma seasoning 
       ✔️ 2 tsp. sweet paprika
       ✔️ Salt, pepper
       ✔️ 150 g pickled cucumber 
       ✔️ 200 g of yogurt
                                       * For the sauce to be served with chicken shawarma
      ✔️ 50 g of light mayonnaise
      ✔️ 10 g of chili paste
      ✔️ 1 tsp thyme 
      ✔️ Salt, pepper
      ✔️ 100 g of plain yogurt

  *For the salad: along with your shawarma 

       ✔️1 pc whole of lettuce
       ✔️1 white onion
       ✔️1 pc cucumber
       ✔️1 half bunch of fresh coriander/parsley 
       ✔️1 half lemon juice
       ✔️4 tablespoons of olive oil
       ✔️Salt, pepper

  *To serve :
       ✔️homemade pita bread or if you like wrapped sandwich much better
              to use sage bread or Lebanese bread

       🚩Instructions :

      1. For the marinade, peel and chop the garlic cloves. Put them in a salad 
         bowl pour the olive oil and the juice of one squeezed lemon. 
         Add the coriander
         and cumin powder, smoked paprika, salt, and pepper. Dip the chicken fillets
         in the preparation and leave to marinate in the refrigerator for 3 hours.
     2. For the sauce, peel the garlic clove and reduce it to small pieces using 
        a  garlic press. In a bowl, pour the Greek yogurt, add the garlic, the juice of 
        half a squeezed lemon, cumin powder, salt, and pepper. 
        Cover the preparation and keep in a cool place until ready to serve.
     3. In a salad bowl, add the lettuce, peeled white onion, and cut into 
        small pieces. 
        Do the same for the cucumber. Rinse and chop the half bunch of 
        coriander, squeeze the juice of half a lemon and add it to the salad. 
        Pour a little olive oil, season with a little salt and pepper, and some
        sumac powder.
    4. Cut the chicken fillets into small pieces. In a frying pan, fry them
         in the marinade until they are cooked and turn golden brown.
    5. Open the sage bread in half and garnish one half with a little salad,
         a few pieces of chicken, and a little sauce.
    6. Roll up each sage bread and enjoy your shawarma!

                    Tips and Tricks
   ✔️you can replace coriander leaves, with parsley leaves it will remain the
        the same recipe jut the flavor of the parsley is less flavor than coriander 
   ✔️For beef, shawarma use beef tenderloin to get an amazingly soft and
        delicious shawarma
