⚜️ A special visit to the kitchen Espagnole..!!! 

The tortilla de patatas is the equivalent in Spanish cuisine of our French omelet. This very thick potato omelet is often eaten as tapas in Spanish bars, on a slice of bread, in a sandwich, or simply as it is in individual portions. Here is an easy Spanish tortilla recipe that you can make at home very quickly for the aperitif.

   🚩Ingredients :

    For the cake 

  ✔️8 eggs
  ✔️1 kg of potatoes
  ✔️ 2 onions
  ✔️ 3 tablespoons of olive oil
  ✔️½ tsp Salt
  ✔️½ tsp Pepper
  ✔️ ½ punch of parsley 
  ✔️250 g green peas

🚩Instructions :

1.  Wash and peel the potatoes for your easy Spanish tortilla. Cut them into pieces (not too thin). Heat a tablespoon of olive oil in a frying pan. Throw the potatoes in and cook them for 15 to 20 minutes, stirring regularly so that they don't stick, and cook evenly.

2.  Meanwhile, break the eggs in a bowl and beat them into an omelet after seasoning them to your liking with salt and pepper. Peel, deglaze, and finely chop the onions. When the potatoes are cooked, add another tablespoon of olive oil. Pour in the eggs and stir quickly before the omelet forms. Add the chopped onions and boiled green peas.

3.  When the Spanish omelet is cooked enough to come off the pan, cover with a plate as wide as your pan. Turn the tortilla over and slide it back into the pan to cook the other side. Place the tortilla in a dish and serve it with a drizzle of olive oil on top.

🚩 Tips :

 ✔️A good, easy Spanish tortilla, just like our traditional potato omelette recipe, should be a bit drooly, unlike the commercially available tortillas. The frying of the potatoes is also important as they should be well browned and crispy.
 ✔️This is a family recipe, in Spain, especially in bars, the tortilla can be served individually and is prepared in no time at all;
 ✔️To prepare a more healthy tortilla, I cook the potatoes in water but they will be a little less soft.
 ✔️The tortilla warms up perfectly in the microwave!
