what ravioli mean in Italian?

According to legend, the recipe for ravioli was imported from China between the 13th and 14th centuries, and brought to Italy by Marco Polo, at the same time as the noodles (spaghetti in Italian). At that time, this dish with stuffing was only reserved for the elite. There are now nearly 300 varieties of pasta in Italy, and ravioli, generally square, are among the most popular in France and in the world.

HOW TO MAKE HOMEMADE RAVIOLI?


Making the dough 
The ravioli is made with fresh dough stuffed, which is cooked in water. The making of the dough is therefore an essential step of this recipe.  

We put flour, preferably type 45, in a container or directly on the work surface, with a little salt, before digging a well. Add the eggs one by one, then knead until you obtain a soft and smooth dough that you let rest in a cool place for at least 30 minutes. Then roll out the dough thinly. You can roll it out with a roller or use a rolling machine, in both cases the strips should be almost 1 mm thick.

Stuffing the ravioli
To fill the ravioli, place the equivalent of a teaspoon of filling in the middle of each cut ravioli, before covering it with another layer of dough. To make sure they stay closed, apply a little water or egg white to the surface of the dough around the filling so that the pasta sticks together. Also, don't let too much air get inside.  

Baking
Cook the ravioli in boiling salted water for about 7 minutes before serving with the sauce of your choice. You can also prepare this recipe in advance and cook them in boiling water at the last minute. A 100% homemade delight.

THE RECIPE FOR GIOVANNI RANA'S RICOTTA SPINACH RAVIOLI
Because the art of pasta is Italian know-how, we asked the experts at Giovanni Rana to show us how to make their famous spinach ricotta ravioli.  

🚩Ingredients :

The ravioli dough 

  ✔️180 g flour (or 120 g flour and 60 g semolina) 
  ✔️2 eggs 
  ✔️ 1 pinch of salt 
The filling

  ✔️100 g ricotta cheese
  ✔️ 100 g mascarpone cheese 
  ✔️ 30 g Parmigiano Reggiano cheese 
  ✔️40 g spinach shoots 
  ✔️ salt and pepper 

🚩Instructions :

1-Place the flour on the table and make a well in the center about the size of your fist. Add the eggs, one at a time. Mix gently, bringing the flour to the center. Knead with both hands until the dough is smooth and elastic. 

2-Cover the dough and let it rest for at least 1 hour. 
Finely chop the spinach. 

3-Put all the ingredients for the filling in a large bowl and season with salt and pepper. Mix gently. Keep the stuffing in the refrigerator. 

4-Roll out the dough with a rolling pin. It should be very thin. Divide the dough visually into two equal halves (the first half to be filled and the second half to be covered with the filling). 
5-Place small amounts of filling on one half of the dough. 

6-Use a pastry brush to lightly wet the surface of the dough around the filling.  Cover the filling with the other half of the dough. Press all around the filling to seal the edges, making sure to remove any air.  Cut ravioli with a serrated cutting wheel. 

7-Cook in simmering water for 3 to 4 minutes. 
You can also form tortellini by stuffing a square of dough with a ball of filling, then folding one corner over the opposite corner, and sealing the remaining two corners.

Homemade Four Cheese Ravioli


🚩Ingredients :

The ravioli dough 

  ✔️2 cups all-purpose flour
  ✔️1 pinch salt
  ✔️ 1 teaspoon olive oil
  ✔️2 eggs
  ✔️1 ½ tablespoons water
The filling

  ✔️1 (8 ounces) container ricotta cheese
  ✔️ 1 (4 ounces) package cream cheese, softened
  ✔️½ cup shredded mozzarella cheese
  ✔️½ cup provolone cheese, shredded 
  ✔️ 1 egg
  ✔️1 ½ teaspoons dried parsley
Egg Wash:

 ✔️1 egg
 ✔️1 tablespoon water


🚩Instructions :

Step 1
Mound the flour and salt together on a work surface and form a well. Beat the teaspoon of olive oil, 2 eggs, and water in a bowl. Pour half the egg mixture into the well. Begin mixing the egg with the flour with one hand; use your other hand to keep the flour mound steady. Add the remaining egg mixture and knead to form a dough.

Step 2
Knead the dough until smooth, 8 to 10 minutes; add more flour if the dough is too sticky. Form the dough into a ball and wrap it tightly with plastic. Refrigerate for 1 hour.

Step 3
While the dough is resting, prepare the ravioli filling. Combine the ricotta cheese, cream cheese, mozzarella cheese, provolone cheese, egg, and parsley, and mix well. Set the filling aside.

Step 4
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the crushed garlic and pesto sauce and cook for one minute. Pour in the heavy cream, raise the heat to high, and bring the sauce to a boil. Reduce the heat and simmer for 5 minutes. Add the Parmesan cheese and stir until the cheese melts. Remove the pan from the heat and keep warm.

Step 5
Meanwhile, in a separate saucepan, warm the marinara sauce over medium-low heat.

Step 6
Preheat an oven to 375 degrees F (190 degrees C). Beat the egg with a tablespoon of water to make the egg wash.

Step 7
Roll out the pasta dough into thin sheets no thicker than a nickel. To assemble the ravioli, brush the egg wash over a sheet of pasta. Drop the filling mixture on the dough by teaspoonfuls about one inch apart. Cover the filling with the top sheet of pasta, pressing out the air from around each portion of the filling. Press firmly around the filling to seal. Cut into individual ravioli with a knife or pizza cutter. Seal the edges.

Step 8
Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the ravioli, and return to a boil. Cook uncovered, stirring occasionally, until the ravioli float to the top and the filling is hot, 4 to 8 minutes. Drain well.

Step 9
Grease a baking sheet. Place the cooked ravioli on the sheet pan and bake in the preheated oven until brown, about 4 minutes.

Step 10
To serve the ravioli, divide them among four warmed serving bowls. Drizzle the marinara sauce over the ravioli and then top with the cream sauce.

🚩 Tips :

To make this recipe 100% vegetarian, look for vegetarian Italian-style hard cheese instead of parmesan.
